This is all organic Gamay from Beaujolais. We would enjoy it with grilled harissa salmon skewers with a pomegranate molasses for dipping. Marcel Lapierre spearheaded the movement in Beaujolais to return to the regions’ traditional methods of winemaking, using only old vines, practicing all organic farming, little to no addition of sulfites or chaptalization, rigorous selection of the healthiest grapes, and fermentation in used oak barrels. After Marcel passed away in 2010, his children Mathieu and Camille took over and have continued his legacy. The juice for this cuvée is sourced from the famed Côte du Py, and a combination of other well-known climats including Aux Chênes and Corcelette. It undergoes a semi-carbonic maceration for about a month, gets aged for 9 months, and is bottled unfined and unfiltered.
